Chicken Salad Sandwich

Everybody likes to do Chicken Salad differently because we all have our preferred tastes. My chicken salad is not far off from my tuna salad – I always use pickle, onion, celery. For chicken seasoning, tarragon and pepper are simple, but sometimes I like to add a bit of dried dill weed.

Based on a recipe from the DASH eating plan, we use our fresh veggies & favorite seasonings, canned chicken and just 3 T of mayo.
If you’re using fresh chicken or leftover rotisserie chicken, you might want to use a bit more moisture, and replace some of the Mayo with yogurt or sour cream.

I normally like to use lots of parsley and pepper, and usually use 1 Tbsp. of lemon juice. But here’s my mix list:
- large can of chicken
- mayo
- lemon juice
- onion & garlic powder
- red onion, pickle and celery
- pepper, parsley & tarragon
Variations
You could use more fruits and nuts in your chicken salad if that’s your thing:
- diced apple
- halved grapes
- dried cranberries
- slivered almonds
- green onions
- Dijon mustard

As with my canned tuna, I always check for bones first by flaking the chicken with a fork.
Then, just mix the ingredients together until well-blended.

Make sure you build a good and healthy chicken salad sandwich with more greens & veggies on whole grain bread. Or put it in a wrap.
This one has green leaf lettuce & cucumber, but I prefer tomato and lettuce.
I like my grapes on the side.
Classic Chicken Salad Sandwich
Ingredients
- 1 12-oz can of chunk chicken breast
- 1 celery rib diced
- ¼ red onion diced
- 1 kosher dill pickle diced
- 1 T lemon juice
- 3 T Hellmann's Mayonnaise Dressing with Olive Oil
- ½ t onion powder
- ½ t garlic powder
- ½ t black pepper
- 1 t tarragon
- 1 T parsley
Instructions
- Combine all ingredients. Mix well, and serve on whole grain bread with lettuce.
