The Irish have Shepherd’s Pie, the English have Cottage Pie, and Americans have this working-mom version called Meatloaf Pie.

Meatloaf Pie Cut

Some people like it with corn in it, but because our Salisbury Steak recipe turned out so rich and delicious, we’re going to use that recipe for the meat.

Grass-fed ground beef, onion, breadcrumb, egg, ketchup, Worcestershire, Dijon mustard and a beef bouillon cube. I know my mom used to make meatloaf with milk, but I don’t think that’s really necessary.

Just like with the Salisbury steak, make sure your meat is well-mixed by hand.

Use a glove if you have to.

Then just press the meat into the pie pan like a giant hamburger.

We’re going to bake it at 350 for 35 minutes, then drain the grease before topping it with potatoes.

The meat will shrink up a little, just like with any hamburger meat.

Meatloaf Pie Base

Some people like it with a pie crust, but those people are just weird. Don’t do that. The meat will release grease that should be drained before topping with mashed potato.

I considered deviating from the normal way I make my mashed potatoes, so it complements the beef recipe, but I decided to stick with the classic.

Better Mashed Potatoes Ingredients

Mashed potatoes, 6 servings, prepared according to package directions except: garlic powder instead of salt and chicken broth instead of water.

Some people make the meatloaf with cooked meat, but we’re not making a sloppy joe. We need it to stick together real good, so I cook the meat part first, then top it with potatoes and bake it a few minutes.

Sometimes I put cheese on top, but I don’t feel like it today.

Ingredients

  • 1 lb ground beef
  • 1 beef bouillon cube, crushed
  • ½ c breadcrumbs
  • ¼ onion
  • 2 T ketchup
  • ½ t Worcestershire sauce
  • 1 t Dijon mustard
  • 1 egg

Mashed Potato Topping

  • 2 c potato flakes
  • 3 T butter
  • 1 ¾ c chicken broth
  • 1 t garlic powder
  • 1 c milk

Instructions

  • Add all meatloaf ingredients to a bowl and mix by hand, folding gently in a circular motion.
  • Preheat oven to 350° F, letting the beef mixture rest in the fridge.
  • Prepare your mashed potato ingredients.
  • When the oven is preheated, evenly press the beef into a pie pan and bake it for 35 minutes.
  • Make your mashed potatoes just before the beef finishes cooking.
  • Drain the grease from the pie pan, and top the beef with mashed potatoes. Bake for another 5 minutes.
