Easy Dirty Rice

Ground beef and rice with fresh veggies, this Cajun-style dish makes a quick and easy weeknight dinner.

Ingredients

  • 1 lb. ground beef
  • 2 garlic cloves minced
  • 2 celery ribs chopped
  • 1 onion chopped
  • 1 T fresh parsley
  • 1 green bell pepper chopped
  • 1 t salt
  • ¼ t red pepper flakes
  • ¼ t black pepper
  • 1 T Worcestershire sauce
  • 1 c rice uncooked
  • 2 ½ c beef broth

Instructions

  • Cook the ground beef in a skillet over medium-high heat about 5 minutes, or until completely broken up and no longer pink.
  • Add the veggies (garlic, celery, onion, green pepper, and parsley) and cook just until aromatic and onion begins to become translucent (about 5 minutes).
  • Add the seasonings (salt, red pepper flakes, black pepper and Worcestershire).
  • Add the rice and broth, bring it to a boil, then reduce heat, cover and simmer 30 minutes.
