Mexican Pizza (Taco Bell Copycat Recipe)
Just like in the 80's - don't forget the green onion!

- ½ lb ground beef
- ½ package Taco Bell Taco Seasoning Mix
- 2 T water
- 8 white corn tortillas
- 16 oz refried beans
- ⅓ c enchilada red sauce
- ⅓ c salsa
- 1 c cheddar cheese, shredded
- 1 c Monterey jack cheese, shredded
- ¼ c diced tomatoes
- ¼ c green onions, sliced
- ¼ c black olives, sliced
- vegetable oil
Cook ground beef and drain any fat, crumbling the meat well.
Add Taco seasoning and water to the ground beef. Bring to a boil, then reduce heat and simmer on low for 10 minutes. There should be no water mixture left in the pan, and the meat should be soft and moist.
Heat up refried beans and set aside.
Heat 1-2 Tbsp vegetable oil in a small frying pan to 375° F
Fry each tortilla for 35-40 seconds per side and drain on paper towel. You may need to add more vegetable oil.
Preheat oven to 400° F.
Assembly
Place 4 tortillas on baking sheet. Spread 2 T of refried beans on each tortilla & top with meat.
Top each tortilla with another fried tortilla. Spread the red sauce and salsa on the top tortilla shell.
Sprinkle ½ c. of the mixed cheeses on top of each tortilla, then sprinkle on diced tomatoes (about 1 Tbsp per tortilla).
Top with black olives and green onion
