Poor Man's Chicken Parm

Working mom's chicken Parmesan - quick and easy weeknight dinner from frozen chicken patties.

Ingredients

  • 4 frozen chicken patties (Tyson)
  • 1 ½ c marinara (Barilla)
  • 4 mozzarella cheese slices
  • ½ c Parmesan cheese
  • 4 Tbsp olive oil divided

Instructions

  • Heat a frying pan with 2 Tbsp olive oil on medium-high. When hot, pan fry two chicken patties at a time, 4-5 minutes per side.
  • Preheat oven to 425° F. Drizzle a baking dish with the other 2 Tbsp olive oil and place the cooked patties in it.
  • Pour marinara sauce over chicken, then layer with mozzarella slices. Sprinkle Parmesan on top and bake 15 minutes, until bubbly.
  • Turn Broiler on Low, and cook within 6" of top burner for 4-5 minutes, or until cheese achieves preferred brownness.
  • Serve on spaghetti noodles or rice.
